Boulder-based company The Jackfruit Company is providing a healthy alternative to meat.
It’s Jackfruit.
If you don’t know what it is, it’s a giant, green fruit that grows primarily in tropical regions of Asia. It is not a common sight in Colorado.
It is an extremely high-yield crop that produces the largest tree-borne fruit in the world. A single jackfruit can grow up to 100 pounds.
The founder of the company, Annie Ryu, was interviewed by Daily Camera.
In the interview, she said that 70 percent of all jackfruit in India goes to waste for lack of commercial supply chains.
That gave them a way to turn jackfruit into income for farming families living in India while giving a whole food meat alternative to vegetarians, vegans, and flexitarians.
